This bread is wheat in its purest expression. 80% extraction of whole wheat, water, and salt. We use fresh wheat from our farmer/miller @migrashfarm . The history of the Sunflower and Flax loaf goes directly back to Richard Bourdon's Berkshire Bakery. Richard's bakery has been in operation and making great bread since the 80's. Richard's work has influenced Chad Robertson from Tartine immensely. We are very excited to share our flour that we milled in this loaf.
